Cooking on Orange Street: Smoked Trout Salad

When you have no idea what to have for dinner, just throw together odds and ends from your fridge -- sometimes the results are surprisingly good. Case in point: this smoked trout salad consisting of leftover smoked trout (from the farmer's market), lettuce, red pepper, tomato and green onion, with just a little fresh vinaigrette whipped up from extra virgin olive oil, dijon mustard, red and white wine vinegar, and seasonings.
